Wow - I was quite impressed by all the concern for my roast debacle. Thanks! So here's the post to alleviate all concerns and questions.
First - of course I didn't throw out the roast!!! What kind of crazy lady do you think I am? Okay, so I may not have cooked it right the first time (which was not my fault, see the next bit), but I'm no culinary slouch! I wrapped the roast in a couple of layers of foil, tossed it into my convection toaster oven at 400 degrees for 30 minutes, let it cool, and then put it into the fridge for dinner the next night.
Second - my thermometer is broken, which is why it went off early. It goes off all the time now; I can't figure out what's wrong with it. Which really bums me out because I bought it last Thanksgiving, so I haven't even had it for a year. I wonder if I still have the receipt and manual? Or if that would even matter, since it's not an expensive thermometer? I'm kinda bummed because I really liked this one! (Anyone have a recommendation for a new one?)
Third - guess what we had for dinner tonight? Roast, of course! I sliced the roast while it was cold, wrapped it (with all it's yummy juices) in some foil, and warmed it in the oven at 325 for half an hour. The result:

Fourth - dinner was YUMMY! The roast by itself was really good, and with the pineapple-plum relish it was even better. Despite the problems, we will definitely be having this dinner again!

I have a Pampered Chef digital thermometer that I love---when I can remember where I put it! There was a couple of weeks there that I couldn't find it until I looked at my fridge one day and it was staring right at me! I thought I would be "smart" and use the magnet on the back and always have it out. But I digress...the thermometer looks a lot like the one from Target so they may actually be manufactured by the same people. I don't know.

I've just looked on the PC site and can't find the thermometer. How weird is that? Do you think they discontinued it?
